Ingredients for Key Lime Pie
- 300 g oat biscuits
- 150 g butter, melted
- 1 x 397 g can of condensed milk
- 3 medium egg yolks
- 4 limes, zested and juiced (you can also use lemons)
- 300 ml heavy cream
- 1 tablespoon powdered sugar
- Extra lime zest for garnish (lemon zest is a suitable substitute)
Instructions for Making Key Lime Pie

Begin by crushing the oat biscuits using a food processor. Alternatively, place them in a plastic bag and crush with a rolling pin until finely ground.

Combine the crushed biscuits with the melted butter, then press the mixture firmly into the bottom and up the sides of a 22 cm springform pan.

Preheat your oven to 180°C (350°F) and bake the crust for 10 minutes. Once done, set it aside to cool.

In a large bowl, beat the egg yolks with a hand mixer until smooth.

Gradually add the condensed milk, beating for 3 minutes. Stir in the lime zest and juice, and mix thoroughly for another 3 minutes.

Pour the lime filling over the cooled crust in the springform pan and bake for an additional 20 minutes. After baking, chill the pie in the refrigerator for at least 3 hours.

When ready to serve, carefully remove the pie from the pan and place it on a serving plate.

For the topping, whip the cream with the powdered sugar until it forms soft peaks. Spoon or pipe the whipped cream over the top of the pie.
